Gluten Free Blueberry Pancakes

Not just your ordinary blueberry pancakes...Gluten Free ones made with coconut flour & coconut oil! They are super fluffy with a hint of coconut sweetness. I got coconut flour from @craftedkosher and I've been experimenting with some delicious recipes!! GF


4 eggs
1/4 c milk
3 tbsp melted coconut oil + more for cooking pancakes 
1/4 cup + 3/4 tsp coconut flour
1 tbsp sugar or coconut crystals
1/4 tsp baking powder
1/4 kosher salt

1. Heat coconut oil on medium low heat in fry pan for cooking the pancakes.
2. Whisk together eggs, milk, & melted coconut oil in a bowl.
3. In a separate bowl mix coconut flour, sugar, salt, and baking powder. 
4. Mix dry ingredients into the wet ones. Fold in blueberries
5. Cook pancakes for 2-3 minutes, until bubbles start to dot the surface, then flip.
6. Serve with fresh blueberries and syrup!
➡️ make the pancakes smaller then you usually would because they are very delicate and can be difficult to flip.

    Hi Ellen,
    Coconut oil does need a KFP hashgacha, but feel free to substitute a different oil in its place if you can’t find it for Passover. Matza meal can be used instead of coconut flour, making it non gluten free. Enjoy! Thank you for stopping by!

    HI, do you know if coconut oil needs a pesach hasghacha and also if i can’t find coconut flour what can i use instead?
