Roasted Chicken with Harissa Chickpeas

One pan chicken dinners are the best! Roasted chicken with harissa chickpeas - loving my new @mina harissa from @craftedkosher ...oh the harissa possibilities!


Ingredients:

Chicken legs & thighs

Olive oil

Salt

Pepper

1 small onion sliced

2 cloves garlic sliced

1 can chickpeas

3 tbsp. harissa paste

2 tbsp. tomato paste

1 c chicken stock

Directions:

Preheat oven to 400F. Heat oil in a large skillet. Sprinkle chicken with salt and pepper. Cook 5 minutes on each side until golden. Remove chicken from the pan. Cook garlic and onion until soft, about 1 minute. Add tomato paste, harissa, chickpeas, and chicken stock. Return chicken to the pan and roast in the oven for 25-30 minutes or until cooked through. Serve with couscous!
