Southern Fried Apples with Truffle Honey Mayo

The rich culinary traditions of Rosh Hashana are replete with meaningful customs symbolizing our evoking of favorable divine blessings in the coming year. Take the ancient custom of apples dipped in honey to a whole new level, keeping with tradition- with a little Southern influence and an awesome kick of truffle.


Southern Fried Apples
Serves 8-10  Parve/Non-Dairy

2 lb. large Fuji Apples (apx. 5 or 6)
1 cup seasoned Breadcrumbs
1 cup Yellow Cornmeal
2 large Eggs
1/2 cup non-dairy Almond or Soy milk
1/2 cup All-Purpose Flour
Vegetable oil for frying
Sabatino Tartufi Truffle Salt, to taste

Slice the apples into wedges (apx. 12-16 wedges per apple) and place into a large bowl. (Note: You don't want the apple wedges too thick. I cut my apples into eighths using an apple cutter and then cut each of those wedges in half.) Dust the apples with flour and toss to coat well.

On a large dinner plate, combine the breadcrumbs and cornmeal. Set aside.

Beat together the eggs and soy/almond milk.

Dip the floured apples into the egg mixture, and then into the breadcrumb/cornmeal mixture, ensuring the apples are well coated in the breading.

Heat the oil (about 1/2") in a large frying pan, over medium-high heat. (Note: you can test to make sure the oil is hot enough to start frying the apples by inserting a small piece of raw apple to see if it sizzles right away). Fry 8-10 apple slices at a time- for approximately 45 seconds to 1 minute on each side, or until golden-brown. Transfer the apples to a paper-towel lined plate to drain off excess oil and to allow to cool slightly. Lightly dust with Sabatino Tartufi truffle salt, to taste.

Truffle Honey-Mayo

1/4 cup
Sabatino Tartufi Truffle Honey
1/2 cup Mayonnaise

Mix together the truffle honey and mayonnaise until well combined. Dip the apple in the honey. Make a blessing loud and clear. L'shana Tova U'metuka. wishing y'all an awesome new year.
