Salted Caramel Ethiopian Berbere Spiced Popcorn

This salted caramel coated, Ethiopian berbere spiced popcorn is spicy, sweet and salty in all the right ways!

Sweet Caramel + Ethiopian Berbere + Sea Salt Kettle Corn!

Berbere is a mixture of fenugreek, cloves, allspice, cinnamon, coriander, cardamom. So incredibly fragrant and tasty.

1/4 cup coconut oil (or canola, which is what I used)
2/3 cup popcorn kernels
3 Tablespoons butter, melted
1 1/2 Tbsps Ethiopian Berbere Spice, plus more
1/4 cup Caramel Sauce, either homemade or store bought
1 1/2 teaspoons sea salt

Add the oil and 3 popcorn kernels to a large pot. *Note: A very large, milchig/dairy pot. The biggest one you have! Cover and cook over medium-high heat until all 3 kernels pop. Take the three kernels out of the pot. Add the rest of the popcorn kernels. Cover and take the pot off of the heat. Wait 30 seconds. Put the pot back on the heat. Cook, shaking the pot occasionally until the popping slows down. After about 2 minutes, and the popping has slowed down, take the lid off of the pot. This lets the steam out and keeps the popcorn crisp. In a microwave safe bowl, heat the butter in 20 second increments until fully melted. Add the Ethiopian Berbere Spice and mix well. Pour over the popcorn and mix very well and quickly. Heat the Caramel Sauce and pour over the popcorn. Mix well. Finish with sea salt and mix well. If you prefer spicier or sweeter, simply add more Berbere or Caramel! Enjoy!
