Jerusalem artichoke, aka sunroot or sunchoke, is a North American native related to the sunflower. It tastes like steamed artichoke hearts. Its blended with golden amber durum wheat and organic spinach powder. All organically grown. The artichoke ribbons are crafted at the Eden Organic Pasta Company on vintage Italian equipment and slowly air dried.
The dough is rolled and folded over on itself eight times creating splendid texture. Rich in riboflavin B2 and it provides protein, thiamin B1, niacin B3, and magnesium.
